  • 1 Handful Spinach
  • 1 Pinch Salt
  • 1 Inch Raw Ginger Peeled
  • 2 Cups Ice

Instructions

  1. Place ingredients in Vitamix (or other high powered blender) in order listed above.  Choose ‘Frozen Desserts’ setting and let the machine work its magic.  Pour and enjoy immediately.

Vanilla Cinnamon Nut Yoghurt Bowl Recipe

Vanilla, cinnamon and Greek yoghurt topped with fruit and nut toppings is one of my go-to breakfast, pre- or post- workout meals, lunch or even a lazy dinner. Basically, it works anytime of day where you need something healthy and easy. While simple looking, this bowl is the perfect and delicious mix of lean protein, probiotics, vitamins, antioxidants, natural anti-inflammatories and healthy fats.

I always have these healthy staples in the house: Greek Yoghurt, a pantry stocked with a variety of raw nuts, a piece of fruit, vanilla extract, cinnamon & honey. This means, if all else fails, I can whip up at least one healthy meal.

Ingredients:

1 cup whole fat Greek Yoghurt

1/2 tsp pure vanilla extract

2 pinches cinnamon

1/2 cup sliced strawberries or other fruit

1 tbsp toasted raw nuts (roast raw nut in a dry pan over medium heat for extra flavor or skip this step if short on time)

Flax seeds

Honey

Directions:

Whip yoghurt with cinnamon and vanilla extract. Top with 1/2 cup sliced fruit, flaxseed and roasted walnuts. Drizzle with honey.

Spring Forward Smoothie Recipe (Kale, Berries, Apple, Lemon)

Although I woke up to a dreary and cold New York City morning, today’s smoothie with kale, berries, apples, lemon and tangy Greek yoghurt made me think about the bounty of Spring that lies just ahead. Clocks turned forward an hour this past weekend, snow is gently melting in the Northeast (although Sikia the “CTO” just warned me about another storm later this week…say whaaat) and I’m headed to Jamaica this coming weekend to celebrate my Georgetown Law School homie’s 40th Birthday. All this means that bikinis, shorter hemlines and bare shoulders are on tap in the very very near future! As my girl Keeba would say, we should “stay ready so we don’t have to get ready.” However, in the spirit of honesty, I do watch what I eat a little more closely when swimsuit wearing time is within my sight line. That’s why this easy to throw together smoothie is a perfect way to “get ready” as it’s low in calories & carbs but high in good fat, protein, nutrients and minerals. As my fellow gym rats say, “this is what you call clean eating.” Because of the fat to protein and carb ration in this recipe, I find this type of smoothie fuels busy mornings in front of the computer, provides sustained energy an afternoon #sweatysesh or even serves as a “too tired to cook dinner” option in the evening.

 

Ingredients:

1 1/2 cup Almond Milk

1 cup Whole Fat Greek Yoghurt

1 cup Strawberries (fresh or frozen)

1/4 cup Blueberries (fresh or frozen)

2 cups Chopped Kale (fresh or frozen)

1 chopped Apple

1/2 peeled lemon

2 tbsp flax seeds

1 cup ice (only if using fresh fruit)

 

 

Directions:

Place all ingredients in a Vitamix (or other high powered blender) and blend on pre-programmed ‘Smoothie’ setting. If the smoothie is too thick, add water. If you like a frothier or colder smoothie, add more ice. Enjoy!

Every August, with friends near and far, we make a pilgrimage to Martha’s Vineyard, a charming Massachusetts island just south of Cape Cod.   We spend several weeks “on island” with family and friends using the time to reconnect, recharge and rebirth our souls.  Many days are spent at the beach sipping champagne while watching the kids throw the football, run into the surf and jump the “bridge.”  Evenings are long and lazy dinners with friends, maybe a limbo contest under the stars and always a few backyard fish frys.  At least once during every stay, we drive up-island to watch the sun dip into the Atlantic ocean for a famous “Menemsha” sunset.  We eat copious amounts of freshly caught lobster often while sitting on sandy towels and drinking homemade cocktails from plastic cups.  As the vacation clock ticks, each of us await for the special moment during our visit on “the rock” where optimism replaces our general pessimistic malaise.  The moment where we exhale saying to ourselves, “all is right with the world” as we look around at the sunkissed faces of people we love and souls that reflect who and what we are.  We each bottle that moment and carry the feeling inside until next August.

People are always stunned to know that some days we have over 100 people gathered together on the beach.

I created this smoothie during this year’s annual trip becuase I wanted a flavor that would take me back to an island so many of us call “our happy place.”  The sweet peaches, creamy avocado and tart yoghurt instantly transport me to those long summer days and subtle island breezes.

Everyone always asks me, “Hey Jackie, what type of blender do you use to make your smoothies?”  Before they finish the question, I am yelling, “A Vitamix.”  This machine and I have had a love affair for almost 10 years.  It blends up the silkiest smoothies breaking down even the toughest of food such as raw beets, celery and nuts.  I also use the Vitamix for pureeing vegetable soups , making large quanties of salad dressing or even creating chunky sauces like homemade tomato sauce.  Buying a vitamix is one of the best kitchen investments I have ever made.  I have talked every one of my friends into purchasing one.  Each one falls in love the same.  After a few days, you wonder how you ever lived without this magic machine.  Check it out!

Are you seeing brightly colored purple, orange and red beets everywhere you turn these days?  I sure am!  We see beets on restaurant menus, beautiful Instagram pictures and piled up at the grocery store.  I did a little research and found that this beautiful vegetable, also known as “blood turnips,” are low in sodium, fat and pack some serious nutritional punch!

Beets are naturally high in folate, which promotes brain function, and are excellent for those with iron deficiencies as it works with B-12.   Beets are also high in the mineral manganese, which promotes blood clotting, anti-aging properties and “sex hormones.”  Hey, don’t blame me; this is what the research says!  This smoothie recipe blends raw beets with low-glycemic berries, sweet oranges packed with Vitamin C,  anti-inflammatory pineapple and ginger, a fiber rich apple and toxic cleansing lime.  The result is a nutritional elixer that that will have you looking good from the inside out.  As you know, I don’t believe in eating food (especially smoothies!) that don’t make your flavor buds explode so this receipe is the perfect blend of tart, sweet and earthy.

The "Green Monster" Revitalizing Smoothie Recipe

This recipe will supercharge your body!  It is packed with everything from fiber and anti-oxidants to vitamin K and protein.  Oh yeah, and because I just don't believe in eating food (especially smoothies!) that doesn't taste extra darn good, this smoothie is the perfect blend of tart and sweet with a touch of spice from the ginger.

Ingredients

  • 3/4 Cup Almond Milk Unsweetened
  • 1 Cup Greek Yoghurt Full Fat
  • 1 Banana
  • 1 Green Pear Chopped
  • 1 Green Apple Chopped
  • 1 Kiwi Peeled
  • 1 Cup Spinach
  • 1/2 Cup Kale Chopped
  • 1 Inch Fresh Ginger Peeled
  • Juice of half a lemon
  • Pinch of sea salt
  • 1 Cup Ice

Instructions

  1. Place ingredients in order listed in Vitamix or other high-powered blender.  If using a Vitamix, choose 'Frozen Desserts' setting.  Once the blender stops, add more water for a thinner smoothie and more ice if you prefer it frothier.

Someone asked me this week, “Hey Jackie, why do you prefer smoothies for breakfast during the week?”  That’s an easy one!  Smoothies are quick kitchen work, portable, easily digestible and allow me to start my day with several servings of fruits, vegetables, clean protein and fiber.  After a smoothie filled with nutrient and vitamin rich whole foods, my skin is glowing from the inside out and I am ready to conquer anything and everything!
