Black Beans in Pressure Cooker Recipe

INGREDIENTS
7 cups water
2 cups fresh rinsed and sorted black beans
½ small yellow onion, chopped
1 bunch cilantro, tied together with kitchen twine
1 tbsp olive oil
1 low sodium organic chicken bouillon cube
2 tbsp balsamic vinegar

DIRECTIONS
This recipe yields black beans that are soft, full of flavor and can be enjoyed alone or with any recipe calling for beans, including the Chicken Tortilla Soup Recipe  here at Jackie Unfiltered. Do not be afraid of the pressure cooker. These modern pots are not your rocking back forth, almost ready to blow up pots of our youth. If used according to manufacturers instructions, modern pressure cookers are safe and produce kitchen magic by reducing food’s cooking time by 2/3.  Trust me, you will swoon for this pot as you do the Vitamix  (Sweet Greens Smoothie Recipe) because a pressure cooker saves a ton of kitchen time by cooking food fast while retaining maximum flavor and nutrients! You know I am all in for anything that gets you in and out of the kitchen while still cooking healthy.  Ok, let’s cook!

Step 1: Combine all ingredients into pressure cooker pot.

Cover and seal with locking lid. Following manufacturer’s instruction, once pot reaches high pressure, reduce heat to low and cook for 15 minutes.

Step 2: Let pressure release naturally. Carefully remove lid and gently stir beans with a wooden Spoon. Drain any excess liquid but do not rinse the black beans. These beans can be eaten alone, with brown rice or used in any recipe calling for canned black beans.

As you can see, the magic pressure cooker does all the work here.  You can just sit back, read a book, play with your kids or your boo while they cook.  My kind of cooking!
